12 gamba shrimp ( very large shrimp )
150 g cooked mussels
1 large squid , in rings
3 slices white bread
25 g almonds
1 red pepper
1 green pepper
garlic
olive oil
1 cup white wine
1 cup brandy
flour
250 g sofrito sauce
Zarzuela is a traditional Spanish seafood stew that originated in Catalonia. It's a hearty, rustic dish that's perfect for serving to a large group of family or friends. Made with a variety of fresh seafood like cod, shrimp, squid, and mussels, it's a favorite among seafood lovers. The Sofrito sauce is the key to making a delicious zarzuela. It's a rich and savory blend of vegetables, white wine, brandy, and flour that infuses the seafood with incredible flavor. This recipe is easy to make but does require a bit of prep work. However, the end result is a warming and satisfying dish that's sure to impress your family and guests.

Instructions

1.Start by preparing the Sofrito sauce. Heat olive oil in a pan, add garlic, onions, tomatoes, and bell peppers. Cook until the vegetables are soft and tender.
2.Add the white wine, brandy, and flour to the Sofrito sauce, and let it cook for a few minutes. Keep stirring to avoid lumps.
3.In a separate pan, fry the bread, almonds, and green pepper in olive oil until the bread is golden brown.
4.Add the cooked bread, almonds, and green pepper to a blender, along with a few spoonfuls of the Sofrito sauce. Puree until smooth.
5.Add the white fish fillets (cut into bite-size pieces), shrimp, squid, and mussels to the Sofrito sauce. Mix gently to coat everything in the sauce.
6.Cover and simmer for 10-15 minutes, or until the seafood is cooked through. Be careful not to overcook the shrimp and squid as they will turn rubbery.
7.Serve hot with crusty bread or a side of rice.
