Ingredients

2 lbs of certified angus beef eye round , fresh ( Original recipe calls for any type of roasting beef )
1 teaspoon garlic salt
1 teaspoon dehydrated onion
1 teaspoon garlic powder
1 teaspoon black pepper
1/4 teaspoon white pepper ( optional )
1 teaspoon paprika
2 cans peas and carrots ( original recipe calls for fresh carrots and peas )
1 can black beans
1/2 cup tomato sauce or 1/2 cup tomato paste
1/2 cup salsa
1/2 cup marsala wine
1 can vegetable broth ( your choice ) or ( 14 ounce ) can beef broth ( your choice )
1 cup Burgundy wine
2 -3 large potatoes ( If you like potatoes , you can use either , see instructions below ) or 5 -6 small red potatoes ( If you like potatoes , you can use either , see instructions below )

Instructions

1.Preheat oven to 325°F (163°C).
2.Cut beef into 1-inch cubes.
3.Mix together garlic salt, dehydrated onion, garlic powder, black pepper, white pepper, and paprika.
4.Toss beef with the spice mixture in a large bowl.
5.Add peas and carrots, black beans, tomato sauce/paste, salsa, marsala wine, vegetable/beef broth, and Burgundy wine. Stir well.
6.Peel and chop large potatoes into 1-inch pieces and add to the mix. OR quarter the small red potatoes and add them in.
7.Transfer the stew to an oven-safe pot, ensuring that all ingredients are evenly distributed. Cover tightly with a lid.
8.Bake in the oven for 2.5 to 3 hours or until the beef and potatoes are fork-tender.
