Ingredients

200 g dried garbanzo beans
1 bay leaf
800 g lamb backstraps
60 ml olive oil
1 tablespoon sumac
1 tablespoon toasted sesame seeds
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried marjoram
1 teaspoon sweet paprika
20 g butter
12 baby onions , halved
1 large carrot , diced small
2 celery ribs , trimmed & diced small
2 small fennel bulbs , trimmed & sliced thin
1 cup fresh flat leaf parsley ( firmly packed )
1 tablespoon sumac
1 teaspoon Dijon mustard
60 ml olive oil
60 ml lemon juice
Za'atar Lamb, Braised Vegetables & Chickpeas is a traditional North African dish that combines tender and flavorful lamb with a variety of braised vegetables and chickpeas for a hearty and nutritious meal. This recipe makes use of Middle Eastern spices like za'atar, sumac, and sesame seeds, which give the dish a unique and delicious flavor. Instructions

1.Soak garbanzo beans overnight in plenty of water.
2.Drain beans and transfer to a large, heavy pot with a bay leaf and enough water to cover by 2 inches. Bring to a boil, reduce heat to medium-low, and simmer, adding water as needed to keep beans covered, until just tender, 2–2½ hours.
3.Preheat oven to 425°. Mix sumac, sesame seeds, thyme, oregano, marjoram, and paprika in a small bowl. Season lamb with salt; coat with spice mixture.
4.Heat 2 Tbsp. oil in a large ovenproof skillet over medium-high heat. Add lamb and cook, turning occasionally, until browned on all sides, 8–10 minutes. Transfer skillet to oven and roast lamb until an instant-read thermometer inserted into the thickest part of lamb registers 125° (for medium-rare), 5–8 minutes. Transfer lamb to a cutting board and let rest 10 minutes.
5.Meanwhile, heat butter and remaining 2 Tbsp. oil in a large pot over medium heat. Cook onions, carrot, celery, and fennel, stirring occasionally, until vegetables are soft but not browned, about 15 minutes. Add cooked garbanzo beans and 2 cups bean cooking liquid. Season with salt and bring to a simmer; cook for 10 minutes. Add parsley and remove from heat.
6.Whisk sumac, mustard, oil, and lemon juice in a small bowl; season with salt.
7.Arrange lamb and braised vegetables on a platter; drizzle lamb and vegetables with sumac dressing.
