Ingredients

1/2 ounce cloud ear mushrooms
10 ounces pork loin
1 tablespoon soy sauce
2 teaspoons cornstarch
4 -5 scallions
6 water chestnuts
1/4 cup peanut oil
3 cloves chopped garlic
1 teaspoon fresh grated ginger
1 tablespoon hot bean paste
1/2 tablespoon shaoxing wine
green parts scallion
1 tablespoon soy sauce
1 tablespoon chinese black vinegar ( or use balsamic )
1 teaspoon sugar
1/2 teaspoon salt
2 teaspoons cornstarch
1 teaspoon sesame oil
1/4 teaspoon black pepper
Yuxiang Rousi is a well-known Sichuan-Style Pork that is famous for its bold and spicy taste. This classic Chinese dish is made with thinly sliced pork loin, cloud ear mushrooms, water chestnuts, ginger, garlic, and scallions. The pork is marinated in soy sauce and cornstarch before stir-frying it with the rest of the ingredients until tender. The sauce is a combination of soy sauce, black vinegar, sugar, and sesame oil, which adds an umami flavor. This dish pairs well with fresh steamed rice and is perfect for a spicy and hearty dinner.

Instructions

1.Soak the cloud ear mushrooms in hot water for 15 minutes.
2.Thinly slice the pork loin, and marinade meat with soy sauce and cornstarch.
3.Cut the scallions at a diagonal into 1-inch lengths.
4.Peel and dice the water chestnuts.
5.Heat the peanut oil in a wok or large skillet over high heat.
6.Add the garlic, ginger, and hot bean paste, and stir-fry for 10 seconds.
7.Add the pork and stir-fry until it is no longer pink.
8.Add the shaoxing wine, scallion whites, mushrooms, and water chestnuts.
9.Stir-fry for another minute.
10.In a small bowl, combine soy sauce, black vinegar, sugar, salt, cornstarch, sesame oil, and black pepper.
11.Pour the mixture into the wok and stir-fry until it thickens.
12.Add the scallion greens and stir-fry for another minute.
13.Serve hot with rice.
