Ingredients

2 cups basmati rice
1 medium onion , diced
4 raw carrots , cut into matchsticks
6 tablespoons oil , divided
1 cup raisins
2 medium potatoes , peeled and thinly sliced
Yummy Persian rice is part of the traditional cuisine of Iran. It is a staple that is frequently found at festive events and special occasions. Instructions

1.Rinse the rice in a fine strainer and soak in 8 cups of boiling water with a tablespoon of salt for at least thirty minutes.
2.Dice the onion and matchstick the carrots. Heat four tablespoons of oil in a large pan over medium-high heat. Add the onion and sauté for at least five minutes. Add 1 tablespoon of turmeric and stir for one minute.
3.Add the carrots and sauté for another 5-7 minutes, stirring occasionally until cooked. Remove the onion and carrot mixture from the pan.
4.Drain the water from the rice mixture and add it to the same pan used for the vegetables. Add 2 cups of water and 2 tablespoons of salt to the rice. Mix well and allow it to boil. Once it starts boiling, reduce the heat to low and cover the lid.
5.Peel and thinly slice the potatoes. Wash them with cold water and pat dry. In a different pan, heat two tablespoons of oil over medium-high heat. Once hot, add the sliced potatoes and fry until light golden.
6.In the same pan used for the onion and carrot mixture, heat one tablespoon of oil over low heat. Add the raisins and sauté for a minute.
7.Once the rice is ready, fluff it up with a fork, and mix in the carrot-onion mixture, raisins, and the fried potatoes.
