Ingredients

100 g black treacle
75 g golden syrup
150 g butter
100 g soft brown sugar
175 g plain flour
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg , grated
275 g medium oatmeal
1 large egg
150 ml full-fat milk
1 teaspoon bicarbonate of soda
Parkin is a traditional cake hailing from the northern regions of England. It is usually served on Bonfire Night, a British celebration on the 5th November, also known as Guy Fawkes Night. The Yummy Parkin is a variation of this classic recipe and has a lovely spiced flavour, thanks to the addition of ginger, cinnamon and nutmeg. It is perfect with a cup of tea or coffee and can be enjoyed all year round, not just on Bonfire Night.

Instructions

1.Preheat oven to 150C/300F.
2.In a pan, heat treacle, golden syrup, butter and sugar until melted and combined.
3.In a separate bowl, mix flour, ginger, cinnamon, nutmeg and oatmeal.
4.Mix bicarbonate of soda with 2 tbsp hot water, then add to the bowl and pour in the melted syrup mixture.
5.Beat the egg with the milk, then stir into the bowl.
6.Grease a baking tin and pour the mixture in.
7.Bake for 1hr 15 mins or until golden and firm.
8.Leave to cool for at least an hour before serving.
