Ingredients

2 cups water
1 teaspoon salt
1/4 cup vegetable oil
1/4 cup margarine
2 cups matzo cake meal
6 egg
Matzo rolls are a traditional food eaten during Passover to commemorate the Jewish exodus from Egypt when there was no time for bread to rise. They are also a type of unleavened bread that is enjoyed by many during the holiday season because of their crunchy texture and slightly sweet taste. Matzo rolls are easy to make and can be eaten on their own or used to make a variety of other dishes, such as sandwiches or bread pudding. By substituting vegetable oil for butter or other oils, they are also suitable for a vegan diet.

Instructions

1.Preheat your oven to 375°F (190°C).
2.In a large saucepan, bring the water, salt, vegetable oil, and margarine to a boil.
3.Remove the pan from the heat and stir in the matzo cake meal until fully combined.
4.In a separate bowl, whisk the eggs until they are light and frothy. Add the eggs to the matzo mixture and stir until fully combined.
5.Let the mixture rest for a few minutes to cool and thicken.
6.With damp hands, form the mixture into rolls about the size of a small fist.
7.Place the rolls onto a greased baking sheet and bake in the preheated oven for 35-45 minutes or until golden brown.

PROS

These matzo rolls are easy to make, tasty, and make a great addition to any meal.
They are unleavened, making them ideal for those who are observing Passover or a gluten-free diet.

CONS

Matzo meal tends to be high in carbohydrates and calories, so these rolls should be enjoyed in moderation.
They are also not suitable for people with nut or soy allergies since margarine is used in the recipe.

HEALTH & BENEFITS

Matzo meal is high in dietary fiber, which can help regulate digestion and keep you feeling fuller for longer periods. Margarine is also cholesterol-free and contains healthy fatty acids that may help to lower LDL or ‘bad’ cholesterol levels in the blood.
