500 g diced lamb

1 stick celery , chopped
1 leek , sliced
3 -4 carrots , peeled and diagonally sliced
700 g potatoes , peeled and thickly sliced
1 bay leaf
1 tablespoon fresh thyme , chopped
3 tablespoons fresh parsley , chopped
salt and pepper
600 ml hot lamb stock or 600 ml vegetable stock
25 g butter

Instructions

1.Preheat the oven to 160°C (320°F).
2.Toss the diced lamb with the seasoned flour.

4.Add the lamb to the frying pan and cook until browned on all sides.
5.Stir in the carrots, thyme, bay leaf, parsley, salt, and pepper until well combined.

7.Transfer the contents of the pan to a large, ovenproof dish.
8.Arrange the sliced potatoes over the top of the lamb mixture and dot with butter.
9.Cover the dish with foil, and bake in the oven for 2 hours.
10.Remove the foil and increase the oven temperature to 180°C (350°F).
11.Bake for an additional 30 minutes, or until the potatoes are golden brown and the lamb is tender and fully cooked.
