1 cup potato starch or 1 cup arrowroot
1 teaspoon xanthan gum
1 teaspoon guar gum
1/4 cup powdered milk ( cow , rice or soy )
1 1/2 teaspoons salt
1 tablespoon Earth Balance margarine or 1 tablespoon butter
3 large egg whites
1 teaspoon vinegar
1 egg white , beaten for wash ( optional )

Instructions

1.In the bowl of a stand mixer, combine the sugar or honey, yeast, and warm water. Mix until the yeast is dissolved and let rest for 2-3 minutes.
2.Add the gluten-free flour, potato starch or arrowroot, xanthan gum, guar gum, powdered milk, salt, Earth Balance margarine or butter, egg whites, and vinegar. Mix on low speed until well combined and the dough is smooth.
3.Preheat the oven to 375°F.

5.Brush the top of the loaf with the beaten egg white or water.
