2 cups milk , divided
1/3 cup white sugar

1 egg , beaten
2/3 cup raisins

Instructions

1.Rinse and drain rice.

3.Add remaining 1/2 cup of milk, sugar and salt. Cook uncovered over medium heat until mixture thickens, stirring frequently (about 15-20 minutes).
4.In a small bowl, beat the egg and stir in a small amount of the hot mixture. Return all to pan and add raisins and butter. Cook 2 minutes more, stirring constantly.
5.Remove from the heat and add vanilla extract. Let it cool down for 5-10 minutes before serving.
