Ingredients

2 1/2 lbs potatoes , peeled
8 -12 ounces sour cream
salt & pepper
2 lbs ground beef
1 medium sweet red pepper , chopped
1/2 cup chopped onion
1 can whole kernel corn , drained
1 can cream of mushroom soup
1/2 cup milk
1 teaspoon garlic salt
2 tablespoons butter , melted
minced fresh parsley ( optional )

Instructions

1.Preheat oven to 350°F.
2.In a large pot, bring the peeled potatoes to a boil in salted water and cook until tender.
3.Drain the potatoes and mash until smooth.
4.Stir in the sour cream and season with salt and pepper to taste.
5.In a large skillet, brown the ground beef over medium-high heat until fully cooked, stirring occasionally.
6.Drain the excess grease and add in the chopped red pepper and onion. Sauté for 3-4 minutes or until tender.
7.Add in the drained corn, cream of mushroom soup, milk, and garlic salt. Stir well.
8.Layer the bottom of a 9x13 inch casserole dish with half of the mashed potatoes.
9.Spoon the beef mixture on top of the potatoes and spread it out.
10.Spread the remaining mashed potatoes on top of the beef mixture and drizzle with melted butter.
11.Bake in preheated oven for 30-35 minutes or until heated through and lightly browned.
