Ingredients

2 lbs tofu
1/2 cup soy sauce
1/4 cup sake or 1/4 cup dry sherry
1 tablespoon sugar
1 tablespoon bonito flakes ( shavings )
1 scallion , chopped fine
1/4 inch fresh gingerroot , grated
2 lemons
Yu Dofu, also known as Kyoto-style plain simmered lettuce, is a beloved dish in Japan. It is a home-style tofu dish that is healthy, easy to make and uses simple ingredients. The soy sauce, sake, and sugar provide the simple broth, while the tofu works to soak it up. This traditional dish is comfort food - it is a world of Japanese simplicity and its inherent elegance.

Instructions

1.Cut tofu into large squares, then press lightly to remove any excess water.
2.Place tofu squares into a clean pot.
3.Add soy sauce, sake, sugar, bonito flakes, scallion, and ginger in a pot.
4.Add about 3 cups of water and bring to boil on high heat. Uncover and bring heat to low-medium to simmer for about 10 minutes.
5.Remove the pot from heat, add lemon juice while the tofu is still hot.

Plain simmered tofu may not appeal to some palates, as it can be quite simple.
