Ingredients

1 young roasting chickens , fresh ( thaw completely if frozen )
1/2 cup glutinous rice
10 garlic cloves , peeled
1 onion , peeled
6 chinese jujubes ( dae chu , dried is ok )
6 chestnuts , peeled ( dried is ok )
1 inch fresh ginger , peeled
salt & freshly ground black pepper , to taste
1 green onion , sliced into thin rings ( garnish )
Yonggyebaeksuk is a popular Korean soup made with young spring chicken, glutinous rice, garlic, onion, Chinese jujubes, and other ingredients. The soup is simmered for hours until the chicken is tender and the rice has become soft and chewy. Instructions

1.Rinse the chicken inside and out and pat dry with paper towels.
2.Soak glutinous rice in cold water for at least an hour.
3.In a large pot, add the chicken, glutinous rice, garlic cloves, onion, Chinese jujubes, chestnuts, fresh ginger, and enough cold water to cover the chicken.
4.Bring to a boil over high heat and then reduce the heat to a simmer. Skim off any impurities that rise to the surface.
5.Simmer for about 1 to 1 1/2 hours or until the chicken meat is very tender and the soup is rich and milky.
6.Season the soup with salt and freshly ground black pepper to taste.
7.Sprinkle with sliced green onion rings and serve hot.
