Ingredients

185 g butter
1 lemon , zest only
220 g caster sugar
5 eggs , separated
250 ml yoghurt , plain
330 g flour
2 teaspoons baking powder
1/2 teaspoon baking soda
250 g sugar
180 ml water
2 teaspoons rose water

Instructions

1.Preheat the oven at 175°C.
2.Whisk butter, lemon zest and 220 g caster sugar together.
3.Beat egg yolks and whisk them into the mixture, gradually.
4.Add plain yoghurt to the mixture and whisk until combined.
5.Mix 330 g flour, 2 tsp baking powder and 1/2 tsp baking soda in a separate bowl.
6.Gradually add the dry ingredients to the wet mixture and stir until fully combined to make the cake batter.
7.Grease a cake tin with butter and pour the cake batter into it.
8.Whisk egg whites until soft peaks form.
9.Slowly add 250 g sugar, while whisking continuously to make the meringue.
10.Pour the meringue on top of the cake batter in the tin and spread it evenly.
11.Bake in the oven for 40 minutes.
12.In the meantime, heat 180 ml of water and 250 g of sugar over medium heat until the sugar is dissolved.
13.Add 2 tsp of rose water to the syrup and let it cool.
14.When the cake is ready, remove it from the oven and let it cool for 10 minutes.
15.Cut the cake into squares, pour the cooled syrup over the cake and serve.
