500 ml plain low-fat yogurt ( best quality you can find )
salt ( optional )

Instructions

1.Line a strainer with a clean cheesecloth or butter muslin and place it over a bowl.

3.Cover the strainer with plastic wrap and refrigerate for at least 8 hours, or overnight if possible.
