2 cups cooked white rice

12 jumbo shrimp , peeled and de-veined
2 chicken breasts , cut into bite-size pieces

Instructions

1.In a mixing bowl, whisk together eggs, 1 teaspoon salt, and 2 teaspoons cornstarch until well combined. Set aside.
2.Heat up a wok or large skillet, add 1 tablespoon vegetable oil. Once the oil is hot, pour in the egg mixture and stir fry until eggs are cooked. Remove from pan and set aside.
3.In the same pan, add a bit more oil if needed, and stir fry chicken until cooked and nicely browned. Remove chicken from pan and set aside.
4.Add shrimp to the same pan and stir fry until shrimp turns pink. Remove shrimp from pan and set aside.
5.Add some more oil to the same pan and stir fry onions, green peas, and tomatoes for 2-3 minutes until onions are translucent and tomatoes are softened.
6.Add cooked rice to the pan along with cooked eggs, chicken and shrimp. Stir well to combine.
7.Mix 1 cup water with 2 teaspoons cornstarch and 2 teaspoons salt. Pour this mixture into the pan and stir fry for 2-3 minutes until the sauce thickens.
8.Stir in ketchup and sugar. Stir fry for an additional minute to combine all ingredients.
9.Serve hot and enjoy!
