1 cup lightly packed fresh cilantro leaves
2 containers water-packed extra firm tofu
2/3 cup tamari
1/4 cup brown rice vinegar
1/4 cup toasted sesame oil
1 tablespoon minced garlic
1 tablespoon minced peeled fresh ginger

Instructions

1.Press excess moisture out of the tofu using paper towels.
2.Whisk together the tamari, brown rice vinegar, toasted sesame oil, garlic, and ginger in a bowl to make marinade.
3.Add tofu and let it marinate for 30 minutes.
4.Preheat the oven to 400°F.
5.Place marinated tofu on a baking sheet lined with aluminum foil.
6.Bake for 20 minutes.
7.While the tofu is cooking, mix the peanut butter, brown rice vinegar, maple syrup, water, tamari, ginger, garlic, sesame oil, and red pepper flakes to make the dressing.
8.In a large bowl, mix together the shredded napa cabbage, shredded red cabbage, julienned carrots, julienned daikon radishes, julienne green onions, and fresh cilantro leaves.
9.Add the cooked tofu to the salad mixture.
10.Drizzle the peanut-sesame dressing over the salad and sprinkle with toasted sesame seeds.
