1 onion , quartered
2 carrots , cut into 2-inch chunks
3 stalks celery with leaves , cut into 2-inch pieces
8 cups water
3/4 cup uncooked orzo pasta
2 eggs , separated
2 lemons , juiced

Instructions

1.Place chicken, kosher salt, onion, carrots, and celery in a large pot with water and bring to a boil.
