160 ounces fresh lotus root ( approx . 160z , whole or sliced )
1/2 teaspoon rice vinegar
1 teaspoon apple juice
4 cups water
2 tablespoons sesame oil
2 tablespoons brown sugar
3 tablespoons soy sauce
1 tablespoon water
1 tablespoon apple juice
1 teaspoon honey
1/2 teaspoon toasted sesame seeds ( optional )
1 finely chopped green onion ( optional )

Instructions

1.Slice the lotus root into thin round pieces.
2.Fill a large bowl with water, rice vinegar, and apple juice.
3.Add the sliced lotus root and let it soak for 2 hours or overnight.
4.In a separate pot, bring 4 cups of water to a boil and add the soaked lotus root.
5.Cook for 5 minutes before removing the lotus root from the pot and discarding the water.
6.In a pan over medium heat, add sesame oil and brown sugar.
7.Once the brown sugar has dissolved, add soy sauce, water, apple juice, and honey.
8.Stir until the mixture is well combined before adding the cooked lotus root.
9.Stir the lotus root in the sauce until it's well coated and the sauce thickens.
10.Remove from heat and sprinkle with toasted sesame seeds and chopped green onion.
