12 large tomatoes

3 cups minced onions

1/2 cup raisins ( or currants )
1/2 cup pine nuts
1 cup raw converted rice
salt and pepper
1/2 cup water
Yemistes Domates Laderes Me Rizi is a popular Greek dish made with stuffed tomatoes filled with a delicious rice, herb, and nut mixture. The tomatoes are baked in the oven until soft and the rice is cooked to perfection. Instructions

1.Preheat the oven to 350°F.
2.Cut off the top of each tomato and scoop out the insides with a spoon.
3.Sprinkle salt and sugar inside the tomatoes.
4.In a large skillet, sauté onions until golden brown, about 5 minutes.
5.Add parsley and dill, then stir and cook for 2-3 minutes.
6.Add raisins and pine nuts, and continue cooking for 2-3 minutes.
7.Add rice and stir until coated evenly with the oil.
8.Add water, salt, and pepper, then mix well.
9.Remove the skillet from heat.
10.Stuff the tomatoes with the rice mixture and place them in a baking dish.
11.Cover with the tomato tops and drizzle olive oil on top.
12.Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for another 15 minutes or until the tomatoes are soft and the rice is cooked through.
