Ingredients

8 large bell peppers
6 tablespoons olive oil
2 large onions , chopped
3 1/2 ounces long grain rice
4 1/2 ounces ground pork
1 tablespoon of fresh mint , chopped
2 tablespoons fresh parsley , chopped
2 teaspoons ground cinnamon
1 can plum tomatoes
sliced potato ( optional )
1 lemon , juice of
1/2 cup water
Yemista, also known as gemista, is a traditional Greek dish that consists of stuffed vegetables like bell peppers, tomatoes, and zucchini, filled with a flavorful rice and meat mixture. Instructions

1.Begin by preheating the oven to 200°C (400°F).
2.Cut off the tops of the bell peppers and remove their seeds and membranes.
3.In a saucepan, heat 4 tablespoons of olive oil and sauté the chopped onions until golden brown.
4.Add the rice and ground pork and cook for 3-4 minutes.
5.Stir in the fresh mint, parsley, and cinnamon.
6.Pour in the can of plum tomatoes and add salt and pepper to taste. Cook for 5-6 minutes.
7.Fill the bell peppers with the rice mixture, pressing down gently as you go, then place the tops back on.
8.If using, place sliced potatoes on the bottom of an oven dish and drizzle with 2 tablespoons of olive oil.
9.Place the stuffed bell peppers in the dish and top with any remaining rice mixture. Drizzle lemon juice and the remaining olive oil on top.
10.Pour 1/2 cup of water into the dish and cover it with foil.
11.Bake for 45-50 minutes or until the peppers are cooked through and tender.
