Ingredients

1 cup long grain rice
1 teaspoon salt
1 teaspoon turmeric
2 cinnamon sticks or 1/2 teaspoon ground cinnamon
2 tablespoons sugar ( we use yellow sugar , but light brown sugar will do )
1/2 cup seedless raisins or 1/2 cup golden raisin
2 1/4 cups water
Yellow Rice (Begrafnisrys), also called Funeral Rice, is a famous South African dish typically served at funeral services and on special occasions such as weddings and holidays. This rice dish has a slightly sweet taste because of the addition of sugar and raisins, while turmeric provides a vibrant yellow hue. Traditionally served as a side dish to Bobotie, a South African meatloaf dish, it can work as a great addition to any meal.

Instructions

1.Rinse the rice in a strainer and set aside.
2.In a saucepan, combine the salt, turmeric, cinnamon sticks or ground cinnamon, and sugar with 2 1/4 cups water.
3.Bring to a boil over high heat and stir in the raisins.
4.Pour in the rice and stir to combine.
5.Cover the pan tightly with a lid and reduce the heat to low.
6.Cook for 18-20 minutes until the rice is tender and the water has been absorbed.
7.Fluff with a fork and remove the cinnamon sticks before serving.

Yellow Rice (Begrafnisrys) tastes great and can be served as a side dish or a bed for a meat dish.
