Instructions

1.Soak wood chips in water for at least 30 minutes. Preheat smoker to 225°F (110°C).
2.Mix together the paprika, white sugar, ground cumin, cayenne pepper, brown sugar, chili powder, garlic powder, onion powder, kosher salt and black pepper in a small bowl.
3.Trim the fat cap of the brisket to 1/4 inch thickness. Rub the spice mix all over the brisket, making sure to pat it down.
4.Place brisket in smoker and smoke for 1 hour per pound of meat, or until a meat thermometer reads 190°F (87°C). Spritz the brisket with water every hour.
5.Remove the brisket from the smoker and let it rest for 1 hour before slicing against the grain.
