5 cups all-purpose flour
1 cup margarine
1 tablespoon baking powder ( heaping )
1 cup soymilk
1 tablespoon salt
1 egg
1 1/2 lbs ground meat
2 large white onions , diced
1/4 cup oil
1 dash salt
1 dash cumin
1 dash cayenne pepper
1 tablespoon flour
5 eggs , hardboiled ( optional )
3/4 cup golden raisin ( optional )
30 black olives ( optional )

Instructions

1.In a large bowl, mix the all-purpose flour, baking powder, and salt together.
2.Cut the margarine into small cubes and add it to the flour mixture. Use your fingers to work the margarine into the flour until it resembles coarse crumbs.
3.Add the soymilk and egg to the mixture, and stir until a dough forms. Knead the dough for a few minutes on a lightly floured surface.
4.In a pan, saute the ground meat, onions, oil, salt, cumin, and cayenne pepper until the meat is browned and the onions are translucent. Add the flour and stir until well combined.
5.Divide the dough into small pieces and roll each piece into a circle. Spoon some of the ground meat mixture onto one side of each circle, leaving a little space around the edge. Add 1/2 hard boiled egg, 1-2 raisins, and 1 olive (optional) to each empanada. Use your fingers to moisten the edges of the circle with water, then fold the dough over to cover the filling. Press the edges together with a fork to seal.
6.Preheat the oven to 350 degrees Fahrenheit. Brush each empanada with beaten egg.
7.Bake the empanadas for 20-25 minutes, or until they are golden brown and cooked through.
