600 g mixed game , cleaned , trimmed of all fat and sinew and finely diced ( e.g . venison , hare , pigeon , wild duck )
6 tablespoons extra virgin olive oil
2 garlic cloves , crushed
1 sprig fresh thyme
2 tablespoons balsamic vinegar
1 onion , finely chopped
2 carrots , finely chopped
1 celery rib , finely chopped
150 g filed mushrooms , finely sliced ( optional )
2 red dried bird 's eye chiles , broken in half ( or to taste )
125 ml red wine
2 cans peeled plum tomatoes
2 vegetable bouillon cubes
1 teaspoon sugar
70 g butter
70 g white flour
700 ml milk
salt
1/4 teaspoon nutmeg , grated
420 g flour
1 pinch salt
4 eggs
1 tablespoon water
semolina flour , for dusting
2 tablespoons vegetable oil
100 g semi-stagionato pecorino cheese or 100 g crumbly swaledale cheese , grated

Lasagne is an all-time classic Italian dish that can be used for an array of occasions. At 'Yaras Game Lasagna', we take it to another level by using game meat instead of traditional ground beef. This dish is perfect for holiday and family gatherings. It’s warm, bubbly, and filling to keep you warm and satisfied. Combing the rich meat sauce with the creamy bechamel sauce and layers of homemade pasta, this dish is a true show stopper. Instructions

1.Prepping the meat: In a large mixing bowl, mix the game meat with 1 tablespoon of olive oil, thyme, balsamic vinegar, and garlic.
2.Cooking the meat: Heat 2 tablespoons of olive oil in a large skillet over high heat and add the meat. Cook for 3-4 minutes per side or until browned. Set aside.
3.Making the sauce: In a large pot, add 3 tablespoons of olive oil and heat. Add onions, celery, carrots, and optional mushrooms. Cook until veggies are tender. Add chiles, red wine, bouillon cubes, and tomatoes with the juice. Bring to a simmer, add sugar and cook for 15 minutes.
4.Preparing the Bechamel Sauce: In a separate pot, heat the butter over medium-high heat. Add flour and whisk quickly for about 2 minutes. Add milk, salt, and nutmeg, whisking continuously over medium-high heat until it thickens. Set aside.
5.Preparing the pasta: In a large bowl, mix the flour with a pinch of salt. Make a well in the center of the flour, crack in the eggs, and add the water. Mix all together until the dough forms, dust with flour. Roll the dough into thin lasagna sheets.
6.Assembling the lasagne: Preheat the oven to 180°C. Grease a large baking dish with the vegetable oil. Spoon about a third of the meat sauce over the bottom of the dish. Cover the sauce with a layer of lasagna, cutting to fit if necessary. Spread the bechamel sauce over the lasagna. Repeat the layering process three more times.
7.Baking the lasagne: Sprinkle the top of the lasagne with the grated cheese, salt, and pepper. Bake in the preheated oven for 35-40 minutes until golden and bubbly.
