Ingredients

1 chicken
4 cardamom pods
10 whole black peppercorns
3 1/2 teaspoons salt
2 onions
3 whole cloves
2 1/2 cups long grain rice ( I use basmati )
5 tablespoons ghee
1/4 teaspoon saffron strand ( I leave this out )
2 cloves crushed garlic
1/2 teaspoon fresh grated ginger
1/2 teaspoon garam masala
1/2 teaspoon ground cardamom
3 tablespoons rose water
1/4 cup sultana
1/4 cup fried almonds ( optional )
1 cup hot cooked green peas ( optional )
3 hard-boiled eggs , halves ( optional )
Yakni Pilau (Chicken Rice) is a traditional recipe that originates from the Indian subcontinent and Central Asia. The rice is cooked in flavor-packed chicken broth and spices, while the chicken is cooked separately and infused with the same spices. This process gives the dish layers of flavor. The dish is usually served hot, topped up with some garnishing and accompanied with chutneys or pickles for an extra burst of flavor. This recipe can be found in different variations across the globe, with each culture adding their twist to it.

Instructions

1.Rinse the chicken and put it in an open-bottomed pot with two of the onions, the whole spices, crushed ginger, garlic, and ghee, and 1 teaspoon of salt.
2.Add enough water to cover everything by roughly 1 inch and bring to a boil over high heat.
3.Reduce the heat to medium-low and simmer for 30 minutes, skimming any foam or impurities from the surface as it cooks.
4.Once the chicken has been cooked through, remove it and set it aside, straining the remaining cooking liquid and discarding any solids.
5.Add enough water to the cooking liquid to yield 5 cups, and bring it to a boil over high heat.
6.Rinse the rice until the water runs clear and strain it.
7.Add the rice to the boiling cooking liquid, along with the reserved chicken, sultanas, and remaining salt and stir everything well.
8.Reduce the heat to low, cover with a lid and cook for 20-25 minutes until the rice is cooked through.
9.Add the rose water, garam masala, ground cardamom, fried almonds, hot green peas, and the boiled and halved eggs over the top of the rice and chicken, giving it a gentle stir before serving.

PROS

Yummy in taste, this mixed rice dish of flavors is easy to make and its accompanied with juicy, melt off the bone, flavorful chicken pieces.
Perfect for an afternoon lunch or dinner with family and friends.

CONS

It takes time to prepare the ingredients and cook the dish.
It might not suit people short on time.
It can be a bit oily due to the use of ghee, so for people looking to avoid oil or need to keep a check on their calorie intake, it might not be the best option.
