2 lbs chicken thighs , cut into 1 to 1-1/2-inch pieces ( boneless or skinless )
1 tablespoon vegetable oil
1 1/2 teaspoons kosher salt
1/4 teaspoon fresh ground black pepper

3 tablespoons soy sauce
3 tablespoons mirin ( sweet rice wine )
2 tablespoons fresh lemon juice
1 tablespoon golden brown sugar
1/4 teaspoon fresh ground black pepper

Instructions
