Ingredients

1 1/4 lbs chicken breasts or 1 1/4 lbs lamb , cut into bite-size pieces
1 cup basmati rice
1 1/4 cups stock ( chicken or beef )
4 green cardamom pods
10 whole peppercorns
1 cinnamon stick
1 bay leaf
1 star anise
1 small pinch saffron
2 tablespoons fresh grated ginger
2 cloves garlic , minced
1 cup diced onion
1/3 cup sultana ( golden raisins )
1/3 cup chopped dried apricot
1/2 cup almonds or 1/2 cup cashews
salt
chopped cilantro ( to garnish )
Yakhni Puloa is a traditional rice recipe that originated in the northern regions of India and Pakistan. The dish is known for its aromatic spices and tender chicken or lamb pieces. Instructions

1.Rinse the rice 3-4 times in cold water until the water runs clear. Soak the rice for 30 minutes and then drain the excess water.
2.In a large pot, heat oil over medium heat. Add the onions and stir until golden brown. Add the ginger and garlic, and cook until fragrant.
3.Add the chicken or lamb pieces and cook for 5-8 minutes or until golden brown. Add the cardamom pods, peppercorns, cinnamon stick, bay leaf, star anise, saffron, and salt. Stir to coat the chicken pieces with the spices, and cook for 1-2 minutes.
4.Add in the stock and bring to a boil. Reduce heat to low and let the chicken or lamb simmer for 20-25 minutes or until tender.
5.Add in the raisins, chopped apricots, and nuts. Cook for 5-10 minutes or until the chicken or lamb is fully cooked and the fruits are plump.
6.In a separate pan, bring 2 cups of water to a boil. Add the pre-soaked and drained rice to the water, along with a pinch of salt. Let the rice cook for 5-7 minutes or until slightly tender. Drain the excess water.
7.Spread half of the cooked rice on top of the chicken or lamb mixture in the large pot. Add the remaining rice on top of the first layer. Add 1-2 tablespoons of ghee on top of the rice.
8.Cover the pot with a lid and cook over low heat for 15-20 minutes or until the rice is fully cooked.
9.Garnish with fresh cilantro leaves and serve hot.
