Ingredients

2 1/2 cups basmati rice
1/2 kg mutton , cut into medium size pieces ( leg )
1 large red chile
2 1/2 cm gingerroot
2 teaspoons fennel seeds
2 black cardamom pods ( badi elaichi )
2 green cardamoms
4 teaspoons coriander seeds
3 large onions , sliced lengthwise
4 tablespoons ghee or 4 tablespoons oil
2 bay leaves
1 cinnamon stick
2 tablespoons yogurt , beaten lightly
salt , to taste
Yakhni Pulao is a traditional Pakistani rice dish that is often served on special occasions such as weddings or religious celebrations. Originating from the Mughal era, this dish is made with fragrant spices and tender mutton cooked in a flavorful broth and served with rice. The spice blend of fennel, cardamom, and coriander give this dish its distinct flavor and aroma. Serve with raita or yogurt for a complete meal.

Instructions

1.Rinse the rice and soak in water for 30 minutes. Drain and set aside.
2.In a large pot, add the mutton, red chile, gingerroot, fennel seeds, black cardamom pods, green cardamoms, coriander seeds, and enough water to cover the meat. Bring to a boil and let simmer for 1 hour or until the meat is tender.
3.Once the meat is cooked, strain the broth and discard the spices and chile. Set aside.
4.In a separate pot, heat the ghee or oil and fry the onions until golden brown. Remove from the oil and set aside.
5.In the same pot, add the bay leaves and cinnamon stick. Fry for 30 seconds.
6.Add the rice to the pot and sauté for 5 minutes or until lightly browned.
7.Pour the strained broth over the rice and add salt to taste. Bring to a boil, reduce heat to low, cover with a tight-fitting lid, and let cook for 15-20 minutes.
8.Once the rice is cooked, remove from heat and let it sit for 5-10 minutes.
9.Fluff the rice with a fork and top with the fried onions. Serve hot.
