Instructions

1.Soak the dried shiitake mushrooms in warm water for about 20 minutes or until they are soft.
2.Peel and chop the sweet potato into small cubes, no larger than 1cm square.
3.In a small mixing bowl, combine the soy sauce, mirin, and sesame oil.
4.Heat a skillet over medium-high heat and add the sweet potato. Cook for about 5-7 minutes, stirring occasionally until tender.
5.Add the shiitake mushrooms and cook for another 2-3 minutes.
6.Take the skillet off the heat and add the soy sauce mixture, stirring well until everything is coated.
7.Lay a sheet of nori shiny side down on a sushi mat or a clean tea towel.
8.Spoon half of the rice onto the nori and spread it evenly, leaving about 1 cm at the top.
9.Put half of the sweet potato and shiitake mixture on top of the rice.
10.Roll the sushi up tightly, using the mat or tea towel to help.
11.Repeat steps 7-10 for the second roll.
12.Slice each roll into bite-size pieces and serve immediately.
