Ingredients

1/4 cup granulated garlic

1/4 cup cumin powder
1/4 cup onion powder
1/4 cup black pepper
1 lb boneless pork shoulder , cut into large cubes
2 cups all-purpose flour
2 teaspoons baking powder
1 pinch salt
1 pinch sugar
1/3 cup shortening
1/3 cup cold water
1 cup cooked and mashed sweet potato , about 1 large
1/2 cup cooked black beans
1/2 cup chopped fresh cilantro leaves
1/2 teaspoon ground cinnamon
salt & freshly ground black pepper
1 cup pineapple , diced
1/4 cup red onion , diced
1 jalapeno , seeded and diced
2 limes , zested and juiced
2 tablespoons fresh cilantro leaves , chopped
1/2 cup pureed chipotle chile
1/2 cup honey
oil , for frying

Instructions

1.Combine garlic, salt, paprika, cumin, onion powder, and black pepper in a bowl to make the pork seasoning mix.
2.Rub the seasoning mix all over the pork and refrigerate for 2-4 hours.
3.In another bowl, mix flour, baking powder, salt, and sugar.
4.Cut shortening into the flour and add cold water to form a dough.
5.In a separate bowl, mix cooked sweet potato, black beans, cilantro, cinnamon, salt, and black pepper.
6.Roll out the dough and cut into rounds. Place sweet potato mixture on the rounds of dough and fold over, pinching the edges.
7.Heat oil in a frying pan and fry empanadas until golden brown.
8.Combine pineapple, red onion, jalapeno, lime zest and juice, and cilantro in a separate bowl to make salsa.
9.Mix chipotle puree and honey and serve empanadas with salsa and chipotle honey sauce.
