2 tablespoons salt
2/3 cup fresh pineapple chunk
3/4 cup achiote paste
1/4 cup granulated garlic
7 lbs boneless pork butt
20 corn tortillas
1/4 cup cilantro , chopped
Xochipilli's Pork Adobada Tacos are a traditional Mexican dish that originated in the state of Puebla. It is believed that their name was inspired by the Spanish word 'adobar,' meaning marinade. The pork is marinated in a blend of achiote paste, fresh pineapple, granulated garlic and salt that enhances its flavour and tenderness. The tacos are usually topped with fresh cilantro and wrapped in warm soft corn tortillas. The dish is a perfect blend of sweet, spicy, and juicy flavours that will make you crave it again and again!

Instructions

1.In a blender, blend salt, fresh pineapple, achiote paste and granulated garlic.
2.In a baking dish, add the boneless pork butt and rub the blend over.
3.Cover with plastic wrap and refrigerate for 12 hours.
4.Preheat the oven to 325°F.
5.Bake the pork for 3 hours until it becomes tender.
6.Cool the pork and cut it into small pieces.
7.Warm the tortillas and fill them with pork and cilantro.
