Ingredients

1 1/2 cups all-purpose flour ( plus more )
1 tablespoon baking powder

6 large egg whites
1 1/2 cups sugar
3 large egg yolks
2 1/2 teaspoons vanilla extract , divided
1/2 cup whole milk
1 cup evaporated skim milk
1 cup heavy cream
1 cup sweetened condensed milk
1 tablespoon dark rum

Instructions

1.Preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan with unsalted butter and dust it with flour.
2.In a bowl, whisk together the flour, baking powder, and ground cinnamon.
3.In a separate bowl, using a mixer, beat the egg whites until stiff peaks form. Gradually add sugar, beating continuously, until the mixture becomes glossy. Beat in the egg yolks and 1 teaspoon of vanilla extract.
4.Gradually fold in the flour mixture into the egg mixture until just combined. Pour the batter into the prepared pan and level with a spatula.
5.Bake for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
6.In a bowl, whisk together the whole milk, evaporated skim milk, heavy cream, sweetened condensed milk and 1 1/2 teaspoons of vanilla extract. Add the dark rum and whisk to combine.
7.When the cake is completely cooled, poke holes in it using a fork. Pour the milk mixture over the cake and let it soak in the fridge for at least 2 hours or overnight.
8.Serve chilled and garnish with whipped cream and berries as desired.
