Ingredients

9 tomatillos , husked and rinsed
1/2 medium white onion
1 serrano chili
1 yellow chile ( guero )
2 garlic cloves
1/2 cup fresh cilantro leaves , loosely packed
salt & freshly ground black pepper , as needed
1/4 cup vegetable oil
6 corn tortillas
1 1/2 cups cooked chicken breasts , skinned and shredded
1/2 cup Mexican crema or 1/2 cup sour cream
1 cup monterey jack cheese , shredded

Instructions

1.Preheat the oven to 350°F.
2.In a blender, pulse tomatillos, onion, serrano chili, yellow chili, garlic, and fresh cilantro leaves with a pinch of salt and fresh black pepper.
3.Heat the vegetable oil in a saucepan over medium heat.
4.Add the tomatillo sauce and cook for five minutes until the sauce thickens. Set aside.
5.Heat the corn tortillas until softened in a hot oven or microwave.
6.Fill each tortilla with the shredded chicken breast, roll up, and set it in the baking dish.
7.Pour the tomatillo sauce on top of the enchiladas.
8.Sprinkle shredded Monterey Jack cheese on top.
9.Bake for 20 minutes or until the cheese has melted, and the enchiladas are heated through.
