Ingredients

1 1/2 lbs ground turkey breast

1 tablespoon garlic , minced
2 tablespoons fresh oregano leaves , minced or 1 tablespoon dried oregano
1/2 teaspoon ground cumin
1 teaspoon salad oil
1 red enchilada sauce ( La Victoria Red Chile Sauce )
salt , to taste
12 corn tortillas
2 cups monterey jack cheese , shredded
fresh cilantro , chopped ( garnish )

Instructions

1.Preheat oven to 350 degrees F.

6.Add another layer of 6 corn tortillas, followed by the remaining turkey mixture.
7.Top with shredded cheese and bake for 25-30 minutes or until cheese is melted and bubbly.
8.Let cool for a few minutes before topping with fresh cilantro and serving.
