Ingredients

1 whole chickens , backbone removed
1 tablespoon kosher salt ( plus more )
1/2 teaspoon fresh ground black pepper ( plus more for seasoning )
1/4 teaspoon cayenne pepper
4 tablespoons olive oil , divided
2 tablespoons lemon zest , finely grated
3 tablespoons fresh rosemary leaves
1 large fresh poblano chile , quartered seeded
1 large red bell pepper , quartered seeded
1 red onion , cut into 1/2-inch slices
1/4 cup red wine vinegar
2 garlic cloves , sliced
1 cup fresh basil leaf
4 avocados , halved and pitted
1/4 teaspoon chili powder

Instructions

1.Preheat oven to 425°F.
2.Season the chicken with salt, black pepper, and cayenne pepper.
3.In a small bowl, mix 2 tablespoons of olive oil with lemon zest and rosemary leaves.
4.Brush over the chicken.
5.Take a large ovendproof skillet and heat remaining olive oil over medium-high heat.
6.Add poblano chile, red bell pepper, and red onion. Cook for a few minutes until they start to soften.
7.Remove the skillet from the heat and pour red wine vinegar and a little salt over the vegetables.
8.Place the chicken, skin-side down, on top of the vegetables.
9.Put a brick wrapped in foil on top of the chicken.
10.Roast for 30-35 minutes, until the chicken's internal temperature reaches 165°F.
11.Let the chicken rest for 5-10 minutes, slice and serve with fresh basil, ripe avocado slices and a sprinkle of chili powder on top.
