Ingredients

1 medium onion , thinly sliced into half-moons
8 ounces boneless lamb , cubed
1 1/2 teaspoons salt
1 can tomatoes with juice , coarsely chopped
2 green bell peppers , seeded chopped into 1 1/2-inch squares
5 green onions , white parts only chopped into 1-inch lengths
1 tablespoon chili oil ( oil that has had a lot of red pepper flakes steeping in it )
1 lb fresh udon noodles
1 cup fresh cilantro leaves , chopped

Instructions
