Ingredients

1 lb daikon radish ( Asian white radishes available in Asian markets and now in many grocery stores )
salt
1 fresh red chile
2 scallions ( green parts only )
1 teaspoon light soy sauce
1 1/2 teaspoons rice vinegar
1 teaspoon sesame oil
3 tablespoons peanut oil
3/4 teaspoon cornstarch or 3/4 teaspoon potato flour
2 tablespoons cold water

Instructions

1.Take the daikon radish and peel it using a vegetable peeler or knife. Cut the radish into thin slices using a mandolin or sharp knife.
2.Sprinkle salt on the slices, toss the slices to mix well and leave them untouched for 10-15 minutes.
3.In the meantime, slice the fresh red chile and scallions.
4.After 10-15 minutes, squeeze out the excess water from the radish slices using your hands.
5.Add the sliced chili and scallions to the radish.
6.In a small bowl, mix light soy sauce, rice vinegar, sesame oil, peanut oil, cornstarch or potato flour with cold water to make a dressing.
7.Pour the dressing over the radish and mix everything together.
8.Serve immediately.
