Ingredients

1 lb extra firm tofu , sliced into six 1/2-inch slices
cooking spray
3 tablespoons low sodium soy sauce
2 teaspoons olive oil
2 tablespoons gingerroot , fresh , minced
2 teaspoons minced garlic , about 1 large clove
1 hot green chili pepper , thinly sliced ( or red , Thai-variety )
1/2 cup shiitake mushroom , thinly sliced
1 small sweet red pepper , sliced into 1/4-inch pieces
1 cup uncooked string bean , trimmed and cut in half
2 tablespoons teriyaki sauce
1/4 cup fresh basil ( Thai or Italian , torn.plus a few leaves whole for garnish )
2 tablespoons scallions , thinly sliced on diagonal ( for garnish )
2 cups cooked brown rice , kept hot

Instructions

1.Preheat oven to 400°F.
2.Spray a baking sheet with cooking spray.
3.Lay tofu slices on a paper towel and press with another towel to remove excess water.
4.Arrange the tofu on the prepared baking sheet.
5.In a small bowl, whisk together soy sauce, olive oil, ginger, garlic, and chili pepper.
6.Brush half of the soy sauce mixture over the tofu, reserving the remaining sauce.
7.Bake tofu for 10 minutes.
8.In a separate bowl, combine mushrooms and red pepper with the reserved sauce and mix well.
9.Remove the baking sheet from the oven and add mushrooms, pepper, and string beans around the tofu slices.
10.Brush all of the vegetables with teriyaki sauce.
11.Bake for another 15-20 minutes until the vegetables are soft and lightly browned.
12.Remove from oven and sprinkle torn basil leaves on top of the vegetables and tofu.
13.Serve hot with cooked brown rice and garnish with sliced scallions.
