Ingredients

2 cups all-purpose flour
1/2 cup unsweetened dutch cocoa
1 1/2 teaspoons baking soda

1 large egg
1/2 teaspoon peppermint extract
1 cup low-fat buttermilk
1 1/3 cups light corn syrup ( not low calorie )
4 large egg whites
1 pinch cream of tartar
1/2 teaspoon peppermint extract
1/2 teaspoon vanilla extract
2 cups confectioners ' sugar ( powdered )
Whoopie pies are an American dessert that took birth in the 1920s. It consists of two cookie-shaped cakes and a rich, creamy frosting spread in the middle. However, this peppermint whoopie pie is a winter variant with refreshing peppermint flavor and dark chocolate cookies. This dessert is perfect for a Christmas party or a winter evening treat. The cookie is soft and fluffy while the filling is thick and creamy. It is a perfect balance between rich chocolate and refreshing peppermint.

Instructions

1.Preheat the oven at 350°F / 180°C.
2.Sift flour, cocoa, baking soda, and salt.
3.In a large bowl, beat the butter and sugar together until well combined.
4.Add egg and peppermint extract to the mixture.
5.Combine dry ingredients with the wet mixture while adding buttermilk slowly. Mix well.
6.Spoon the mixture onto a lined baking tray and bake for 10 - 12 minutes.
7.While the cookies are baking, make the filling. Combine corn syrup, egg whites, and cream of tartar in a bowl and place it over boiling water. Beat the mixture until it gets thick.
8.Add peppermint and vanilla extract. Beat again.
9.Slowly add powdered sugar to the mixture and beat until creamy.
10.Allow the cookies to cool down and then spread filling on half a cookie. Place the other half on top and press lightly.
