4 large burrito-size wheat flour tortillas

10 ounces frozen chopped spinach , thawed and squeezed dry
1/2 teaspoon red pepper flakes

Instructions

1.In a bowl, mix together cooked ground beef and taco sauce.
2.Spread 1/4 of the beef mixture onto half of each tortilla.
3.Divide the blue cheese, spinach and red pepper flakes evenly between each tortilla.
4.Fold tortillas in half and pat down lightly.
5.Heat a large skillet over medium-high heat.
6.Cook quesadillas until cheese is melted and tortilla is golden brown, about 3 minutes per side.
