Ingredients

500 g fine semolina
500 g flour
1 teaspoon salt
water
8 lamb chops or 8 skinless chicken pieces , on bone but skin & fat free if possible
1 large onion
3 garlic cloves
2 medium carrots
2 medium courgettes ( zucchini )
2 large potatoes
1/4 swede or 1/4 turnip
1 parsnip
1 cup chickpeas , drained
2 teaspoons ras el hanout spice mix
salt & pepper
1 pinch dried mint
1 tablespoon sunflower oil or 1 tablespoon vegetable oil
1 cup of liquidised tomato puree
1 1/2 liters water
1 large green chili ( optional )

Instructions

1.In a large mixing bowl, combine the fine semolina, flour, and 1 teaspoon of salt.
2.Slowly add water and knead well until the dough is smooth, pliable and slightly wet to the touch.
3.Divide the dough into small balls, then flatten them lightly between your palms to form discs. Place them on a floured surface and set them aside for at least 10 minutes.
4.Preheat your oven to 200 degrees Celsius and put the lamb chops or chicken pieces on a baking tray. Bake them for 20 minutes until they are golden brown.
5.In a large pot, sauté the onion, garlic, and oil. Add the tomato puree, salt, pepper, ras el hanout spice mix, and dried mint. Mix well.
6.Add the vegetables and mix well. Pour 1 1/2 liters of water and bring the mixture to a boil. Lower the heat and let the vegetables simmer for 30 minutes until they are cooked.
7.Break up the cooked dough and cook them in a steamer until al dente. Spread the steamed dough on a plate and top it with lamb chops or chicken pieces and the cooked vegetables.
8.Serve hot with a side of green chili if you like. Enjoy!
