Ingredients

1 medium cooking onion
1/4 cup olive oil
1 whole dried lime , pierced once with a skewer ( loomi , Not optional ! It gives it 's distinctive taste to this soup )
2 tablespoons tomato paste
3 garlic cloves , crushed
1 medium tomatoes , chopped
sea salt
fresh ground black pepper
1/2 teaspoon ground cumin
1/4 cup fresh cilantro , chopped
1 large carrot , diced
1 medium yellow potato , diced
3 1/2 cups chicken stock ( I use my own homemade )
1/4 cup red lentil
1/4 cup rice vermicelli , broken up
1 lemon , a fresh squeeze for each serving ( optional but delicious )

Instructions

1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and sauté until soft and translucent, about 5 minutes.
2.Add the dried lime, tomato paste, garlic, and chopped tomatoes. Stir well to combine.
3.Season with sea salt, black pepper, cumin, and cilantro. Stir well to combine.
4.Add the diced carrot, potato, chicken stock, red lentil, and rice vermicelli. Stir well to combine.
5.Bring the soup to a boil, then reduce the heat and simmer for 30-40 minutes, or until the vegetables are soft and the lentils are cooked through.
6.Serve hot, with a fresh squeeze of lemon over each serving.
