Ingredients

6 tablespoons tamarind pulp
3 tablespoons jaggery or 3 tablespoons brown sugar
1 tablespoon ginger , chopped
2 1/2 tablespoons seedless raisins
1 teaspoon cumin seed , freshly roasted and ground
1 teaspoon mango powder
2 -3 teaspoons red chili powder
3 firm ripe bananas , peeled and thinly sliced
1/2 cup melon seeds
salt
This Wonderful Banana Chutney is a sweet and tangy condiment that is a popular accompaniment to Indian cuisine. It is made with ripe bananas, tamarind pulp, jaggery or brown sugar, and a blend of spices that give it an aromatic flavor. It can be served as a side with rice, roti or dosa, or enjoyed as a dip with snacks like samosas or pakoras. The chutney is easy to make and can be stored for a few days in the refrigerator.

Instructions

1.Soak the tamarind pulp in 1 cup of hot water for about 15 minutes.
2.Once the tamarind has softened, extract the juice and discard the tamarind.
3.In a pan, combine the tamarind juice, jaggery or brown sugar, ginger, seedless raisins, cumin powder, mango powder, red chili powder and salt.
4.Cook for about 5 minutes, stirring constantly, until the mixture comes to a boil.
5.Add the sliced bananas and melon seeds to the pan and mix well.
6.Cover the pan and cook for about 20-25 minutes, stirring occasionally, until the bananas are soft.
7.Once the chutney has cooled down, transfer it to a clean dry container and store refrigerated.
