3 lbs fresh asparagus
2 tablespoons softened butter
10 slices dense white bread
6 egg yolks
1 1/2 cups cream or 1 1/2 cups milk
pepper
nutmeg
8 ounces good quality Fontina cheese , thinly sliced
19 ounces thinly sliced prosciutto ( optional ) or 19 ounces black forest ham ( optional )

Instructions

1.Preheat the oven to 375°F (190°C).
2.Cut off the woody ends of the asparagus and steam them until they are just tender. Set aside.
3.Spread the softened butter over the bread slices and cut them into quarters.
4.In a separate bowl, whisk together the egg yolks, cream or milk, pepper, and nutmeg.
5.Grease a 9-inch round cake pan and line the bottom with a circle of parchment paper. Arrange one layer of buttered bread slices on the bottom of the pan, cutting the slices to fit if necessary.
6.Pour 1/3 of the egg mixture over the bread.
7.Arrange 1/3 of the asparagus over this.
8.Add 1/3 of the Fontina cheese slices over this layer of asparagus.
9.If using, arrange 1/3 of the prosciutto or black forest ham over the cheese.
10.Repeat the layering process twice more, ending with a layer of Fontina cheese.
11.Bake the torta for about 40-45 minutes until it is golden and set.
12.Remove from the oven and allow it to sit for at least 10 minutes before slicing and serving.
