Ingredients

1 packet fried Chinese noodles
1/2 - 1 head Chinese cabbage ( Wombok )
6 shallots
100 g roasted almonds
100 g pine nuts
1/2 cup caster sugar
1/4 cup white vinegar
1 tablespoon soy sauce
2 teaspoons sesame oil

Instructions

1.Preheat the oven to 180°C. In a bowl, mix the caster sugar, white vinegar and soy sauce until the sugar has dissolved. Set aside.
2.Spread the almonds and pine nuts in a single layer on a baking tray. Roast in the preheated oven for 5-10 minutes or until golden brown. Set aside to cool.
3.Finely shred the Chinese cabbage (wombok) using a sharp knife. Transfer to a large bowl.
4.Trim ends and green tops off the shallots. Cut the white part into thin rounds.
5.Add the fried Chinese noodles, shallots, cooled nuts and sesame oil to the Chinese cabbage. Toss everything together until well mixed.
6.Drizzle with the dressing and toss once more so that everything is evenly coated.
7.Serve immediately and enjoy!
