Ingredients

3 cm fresh ginger , peeled
2 stalks lemongrass , trimmed
4 hot red chili peppers , seeded
4 fat garlic cloves
3 tablespoons vegetable oil
4 boneless skinless chicken breasts
1 tablespoon sugar
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon toasted rice ( see tip )
1 lime , juice of
1 mild chili pepper , sliced
10 -12 leaves Thai basil
Wok Tossed Lime and Chilli Chicken is a popular street food in Thailand, where it's known as 'gai pad prik glaam'. This dish can be found in many Thai restaurants and food markets around the world, and it's a favorite among spicy food lovers. Instructions

1.Cut the ginger into thin matchsticks. Bruise the lemongrass by hitting it with the back of a knife, and then finely chop it. Bruise the hot chili peppers by giving them a quick smash with the side of your knife.
2.Pound the garlic with a mortar and pestle or finely mince it with a knife.
3.Heat the oil in a wok or large frying pan over high heat.
4.Add the ginger, lemongrass, hot chili peppers, and garlic to the wok, and stir-fry for 30 seconds to release the fragrant aromas.
5.Add the chicken to the wok, and stir-fry for 3-5 minutes until the chicken is golden brown and cooked through.
6.In a small dish, mix together the sugar, fish sauce, soy sauce, and toasted rice powder. Pour the mixture over the chicken, and stir-fry for another minute to evenly coat the chicken with the sauce.
7.Squeeze the juice of 1 lime over the chicken, and stir-fry for an additional 30 seconds.
8.Garnish with sliced mild chili pepper and Thai basil leaves. Serve hot with steamed rice.
