Wok-Less Yeast-Less Steamed Buns with Pork Filling are a popular street food in China and are often served as a snack or a meal. The dough and the pork filling are easy to make and once you have mastered the basic recipe, you can experiment with different fillings and flavors. These buns are perfect for a family dinner or a potluck, and they can be frozen for later.

Instructions

.In a large bowl, combine sugar with warm water until sugar dissolves.
.Add the all-purpose flour and baking powder to the bowl and stir to combine.
.Add the lard to the flour mixture and stir to incorporate. Knead the dough for 5-10 minutes until it becomes soft and pliable.
.Cover the dough and let it rest for 30 minutes or until it doubles in size.
.In a shallow dish, combine the pork cubes, garlic, ginger, 2 teaspoons of sugar and 2 tablespoons of soy sauce.
.In a small bowl, whisk together the cornstarch, dry sherry, and remaining soy sauce. Set aside.
.Heat vegetable oil in a large skillet on medium heat and add the diced onion. Sauté for 2-3 minutes until it softens.
.Add the pork mixture to the skillet and cook until the pork is no longer pink. Stir in the cornstarch mixture and cook until the sauce thickens.
.Divide the dough into 24 equal parts and roll each piece into a ball. Flatten each ball to form a circle and place a spoonful of the pork mixture in the center. Pinch the edges of the dough circle together around the pork to seal the bun.
.Place each filled bun onto a square of parchment paper and arrange them in a steamer basket over boiling water.
.Steam the buns for 15-20 minutes or until they are fully cooked and fluffy. Serve warm.
