Ingredients

4 pork loin steaks
100 g fresh white breadcrumbs
1 lemon , zest of
20 g fresh flat leaf parsley , finely chopped
1 large egg
2 tablespoons vegetable oil
750 g desiree red potatoes , peeled and cut into quarters
125 ml milk
3 tablespoons tomato ketchup
65 g fine green beans , trimmed

Instructions

1.Preheat the oven to 200°C fan.
2.Using a sharp knife make deep slits in the pork chops to represent 'fingers'.
3.Mix together the breadcrumbs, lemon zest, parsley and egg. Season and press a quarter of the mixture onto each pork chop.
4.Heat the vegetable oil in a frying pan and fry the chops on a medium heat for 2–3 mins on each side until browned.
5.Transfer to the oven and bake for 10–15 mins.
6.Meanwhile, cook the potatoes in salted boiling water for 10-12 mins or until tender. Drain and mash with the milk and ketchup.
7.Boil the green beans for 2-3 mins and serve with the chops and mash.
