Ingredients

796 ml whole tomatoes with juice
284 ml mushrooms , drained
1/2 kg hot Italian sausage , partially frozen casing removed
1 green pepper , chopped
1 red pepper , chopped
1 yellow onion , chopped
2 tablespoons oil
1 teaspoon minced garlic
1 1/2 teaspoons italian seasoning
156 ml tomato paste
1/4 cup grated parmesan cheese
1 cup grated cheddar cheese or 1 cup mozzarella cheese
350 g tortellini ( Olivieri with Three Cheeses )

Instructions

1.Heat oil in a large saucepan over medium heat.

5.Add the peppers and cook until tender. Combine the sausage, mushrooms, and peppers.
6.Add the tomatoes, tomato paste, and parmesan cheese to the pot, stir ingredients and add salt as required.
7.Continue cooking medium heat for 15 minutes. Cook the pasta separately in hot, salted water according to package directions.
8.Combine the sauce and pasta once they are done cooking.
9.Garnish the pasta with grated cheese.
